      lkrfletcher Those look as good as they sound. Looks like steak, onions, mushrooms, peppers and cheese. Am I missing anything?

        Enchiladas two ways. Half are beef with red sauce filling and the other half are chicken with a verde sauce filling. All pretty tasty…wayyyy too much food for 2.5 people though!

                                          Butternut squash, kielbasa, Brussels sprouts, pancetta, and pine nuts roasted with some maple syrup. Plan to add shredded Parmesan cheese and balsamic glaze.
