Steve Winscot You have a terrific talent… Time to rest😊 I’m not showing my wife your pics. I already have set a much lower bar, and don’t want to renegotiate our relationship after 53 years… Cheers

Steve Winscot That part of Montana is a wonderful place to be. Got an extended inspection assignment in Great Falls about 7-8 years ago & really enjoyed that part of the country. I could really live there. The country was great, the people were great, everything. I was there just as Summer was turning to Fall & I did not realize it could get that hot there, then of course the temps could drop pretty well too. Loved it though, no humidity amongst many other things.

Born and raised in montana, traveled the country but couldn’t leave the mountains. We do have wild weather, snow in the morning, sunburn in the afternoon.

The wife picked up some boneless skinless chicken breast and wanted me to do something healthier with them. So I made a salad.

gus4416 I use trimmed pork sirloin soaked in ham cure for the specified time rotating daily, soak it out for 2-3 days rotating it daily so it isn’t too salty, grind and add sure gel binder, about 3 ounces per 25lbs, and high temp cheese. Stuff into red bologna casing and then into the smoker.
