    I have been grilling my whole life, in the last few years I have started getting into processing and smoking more.

    My favorite snack stick seasoning is the BBQ/Habanero Summer Sausage/Snack Stick seasoning. It is amazing as a Summer Sausage too!! With Habanero in the title you might think it would be too hot, but its not, the sweetness from the BBQ balances it very well.

    For Brats…its too hard to pick one, for pork/beef it is probably Habanero Mango or Cheeseburger Cheddarwurst. We also make a lot chicken Brats and for that the best one I have tried so far is the Raspberry Chipotle. However we are going to be doing some Hot Buffalo Wing Brats with Hit-Temp Blue Cheese once that comes in stock. I will definitely give everyone an update on how those turn out!

    Also the patty mixes Roasted Garlic and Onion, Jalapeno and the Montreal mixes are all VERY good!

    I have a Green Mountain Daniel Boone grill, using mostly Pecan and now Cherry Pellets.

    We ran 25 lbs of chicken breast through a 3/16th plate (once) and added the Hot Buffalo Wing Seasoning and 2 lbs of the Blue Cheese to the mix. We then stuffed them in collagen casings and they are currently in the freezer awaiting vacuum packing. However I took two brats that were misshapen and the left overs from the stuffer home last night.

    I tossed them on my green mountain daniel boone grill (currently using Cherry pellets) at 390 until they were cooked. The taste was amazing! The Hot Buffalo Seasoning did not have as much heat as I was expecting but the overall taste was outstanding! For chicken brats I highly recommend the combination of the Hot Buffalo Wing Seasoning with the Blue Cheese!

    One other thing we did on this was use a binder to help with the consistency as the last time we did chicken brats we thought they were a little crumbly.

    I was just wondering if anyone else has a recipe or seasoning that they use for anything other than its intended purposes? For example I like taking our wild game seasoning (https://www.waltonsinc.com/wild-game-seasoning) and shaking it onto cut up pieces of granny smith apples or avacados, everyone thinks I am crazy for doing it but I love it! I also found out recently that the bloody mary wing shake (https://www.waltonsinc.com/bloody-mary-wing-shake-spice) goes great on some pizza!

I worked for 3 years in Walton’s Customer Service department, I have probably spoken with a good deal of people visiting this page in one way or another! I am now working on content creation for waltonsinc.com and meatgistics.com.

Im originally from upstate New York and before I worked here I had never made homemade Sausage before. Now I love processing and the satisfaction that comes from eating or serving a well made homemade Snack Stick, Summer Sausage, Bratwurst, etc.

I like to think I eat healthy and sometimes do, but the truth is I am weak when it comes to food so I am somewhat fat again!
