      Here are a few little slow smoked Country Style Ribs that are left, after everyone chomped away on them something quick. They were real good with some last years corn on the cob & this really nice Country Boule Andrew made.         Grilled some Cajun deer brats and hot dogs after work. It’s not those delicious looking deer chops that Ron Parrish made, but they tasted pretty good.

              Finally able to do a little low and slow smoking. Did two racks of baby backs. Worked out perfect as we were doing some yard work while the ribs did their thing. It was a good meal.20220515_141320.jpg 20220515_183136.jpg

                          Surg Those pork cubes look awesome. I’ve got to try that for my pork green chile (chile verde). I have used smoked pork butt but I think the cubes will impart a better smoked flavor.

                              cdavis thx, I did like the wet cure a lot. Today my son Sean made this Mac and Cheese using that ham cured pork loin pictured above. He did the whole thing using Ye Olde Secret Grandma’s Recipe 😉 Hard to see the ham but there is a pound of it diced up in there.

                                      Tex_77 That is always a good mix. Made up a few of those the other day too & always good. Got a batch of first crop green beans with little new Cream Taters last night & Margaret made them up with a little bacon. They sure were tasty. When I asked about photos, they were all done gone though.
