Surg Those pork cubes look awesome. I’ve got to try that for my pork green chile (chile verde). I have used smoked pork butt but I think the cubes will impart a better smoked flavor.

Grilled some Cajun deer brats and hot dogs after work. It’s not those delicious looking deer chops that Ron Parrish made, but they tasted pretty good.

cdavis thx, I did like the wet cure a lot. Today my son Sean made this Mac and Cheese using that ham cured pork loin pictured above. He did the whole thing using Ye Olde Secret Grandma’s Recipe
Hard to see the ham but there is a pound of it diced up in there.

Tex_77 That is always a good mix. Made up a few of those the other day too & always good. Got a batch of first crop green beans with little new Cream Taters last night & Margaret made them up with a little bacon. They sure were tasty. When I asked about photos, they were all done gone though.

A family friend was in a motorcycle accident yesterday. Thankfully, he’s home and recovering. Decided to take him a nice steak dinner. Flatiron with caramelized onions with red wine and mushrooms marinaded in balsamic vinegar and rosemary.

Deepwoodsbutcher awesome meal for a friend. May is motorcycle awareness month, please keep an eye out for us as we bring our two wheels back to life.

Finally able to do a little low and slow smoking. Did two racks of baby backs. Worked out perfect as we were doing some yard work while the ribs did their thing. It was a good meal.

ND Mike looks like you are putting that BGE to work, nice looking ribs

Here are a few little slow smoked Country Style Ribs that are left, after everyone chomped away on them something quick. They were real good with some last years corn on the cob & this really nice Country Boule Andrew made. Got lucky on a few of the ribs
& they had a little back rib in them.

Must of been the day for country style pork ribs. We did ours after marinading for a couple hours in soy sauce, chopped green onion, garlic and a little sugar.
Grilled and served with sauteed egg plant, and fresh cuccs over rice.



processhead a bit of Asian inspired ribs, needs to pair them up with an Asian beer.

YooperDog Thank you, they were good & Andrew is really doing a good job with his bread I think. We picked a big mess of new crop green beans last night when we got in form an out of town run & Margaret cooked them up with some of the little new crop cream taters & bacon we had. It sure was good, but when I wen to look for pictures they was all done gone. I will try again next time.

Went for my old staple today, smoked meatloaf wrapped in homemade bacon. You can’t go wrong with bacon unless you listen to my wife. She asked me what was up with the bacon all over the meatloaf “flavor”! I don’t think I overdid it, how about you? Told her to take it off if it was to much and I would make breakfast for her with it.
