    calldoctoday Haven’t had beef enchiladas, usually do chicken with green or pork with red, might have to try beef and red.

    bocephus Thank you. I use the Verde (Green) sauce for the chicken or turkey (good us of leftovers by the way) & Red for Beef, Beefy Mushroom as these were, & BBQ (Pulled Pork).

        calldoctoday I haven’t explored that combination yet, usually you see mushrooms with chicken on the enchilada. Will have to make a note for next time.

        HerbcoFood Thank you. I think you will like using the mushrooms with the beef. I found it to be a good combination.

                      After today’s long day, it was look in the fridge and see what is there. Ended up with a grilled smoked cheddar cheese and bacon sandwich on caraway rye with a bit of garlic salt on the butter. Sorry no pictures, I was so hungry I just scarfed it down.

                              calldoctoday Second wind and dealing with leg cramps now, I get dehydrated from sitting long periods in crappy chairs. Trying to get a bunch of potassium back in me before I even think about lying down. The leg cramps are a fact of life with me and the metabolic disorder, the potassium gives me some energy too.
