    wdaly One of my favorite smoked fish. I am guessing hot smoked. Just need some saltines to serve them up.

        Easy dinner tonight . Pot roast (rump)with Yukon gold potatoes, carrots and onions. I seared the roast in a skillet on all sides before throwing it in the slow cooker. Went to work and came home to a great chunk of meat with veggies.

              Surg Brined in water, salt, and brown sugar. Didn’t have a lot of time so smoked for three hours at 200°.

                  wdaly The smoke flavor didn’t go away and hide after 3 hours. I can taste it from here. Nice light dish.

                    It was at Chesters. Never eaten there before, and really haven’t eaten at a fancy restaurant like that since our honeymoon years ago, so we tried something different. I wanted to eat just a flatbread pizza but my wife told me I had to choose something else, preferably a steak, so I obliged! And then it was too beautiful of a steak to not share a picture!

                          Austin Chester’s is probably my favorite place to eat in Wichita (when someone else is picking up the tab). I have had that bone-in ribeye and it is excellent. Now if you didn’t have the baby bakers with the bacon cream sauce, you truly missed out.

                                I just LOVE making Chicken Confit, using leg quarters. I follow a simple recipe, cook them sousvide and finish them in the cast iron pan. A big hit at the house and such a easy thing to prepare when you find those leg quarter 10lbs bag for $0.37/lbs

                                        cdavis A buddy who is a processor makes that stuff, hopefully I see him in November and have a deer to give to him. If I don’t Ill just make my own, or give it a try!

                                          I was going to smoke some venison seasoned with the Spiceology rosemary dijon seasoning. However, when I got it in the mail yesterday it didn’t exactly make it. I already have an email to customer service.
