    Chicken satay on smoker
    Peanut sauce, about 15 ingredients
    Thai cucumber fresh pickle.
    Larb gai… that is a main dish chicken salad thing: Boiled shredded chicken with green oniins, cilantro, red onions, ginger, lime juice, fish sauce, toasted rice, brown sugar.

      I haven’t done this in awhile and the wife requested my smoked glazed salmon. It’s marinated in my homemade concoction for 20 to 30 minutes. Smoked on the pellet grill about 45 minutes then turned up to 350 about another 20 minutes. Then I mix honey with Jack Daniels for a glaze and brush the top of each piece and let that set another 10 minutes in the grill. A chopped salad and some homemade sourdough garlic and herb bread made a tasty summer meal.

          Put the smoker to work last night. I put a small brisket on about midnight. I wrapped it before going to work and let it continue on low and slow. When I got home I cut up some of the point and turned it into burnt ends with my homemade Q sauce. The salad had my first garden cucumber of this year on it and man was it good.

              Dave in AZ Never had any of those but they sure look tasty. The wife and I like trying different foods but have never tried Thai.

                  Cindy Bushar 0 Hi Cindy, here is the recipe
                  1 lb Ground Beef
                  1 lb Ground Sausage (we use venison sausage)
                  1/4 Cup Flour
                  1/4 Cup Dried Bread Crumbs
                  1 Egg
                  1 Onion (diced)
                  1/4 Cup of Milk
                  Salt and Pepper to taste (1/4 tsp to start)
                  Preheat oven to 375 degrees F.
                  Beat the egg and then combine all ingredients using mixer (add the milk last as mixing).
                  Form into 1 1/2" to 2" meatballs.
                  Place on cooking rack coated with non-stick spray.
                  Bake 18-22 minutes or until lightly browned and cooked through.
                  (Known as Frikadeller in Denmark)

                      gus4416 these are all pretty bland dishes. You can get the larb gai chicken salad dish spicy, but my wife likes it low heat. Usually you just add crushed red pepper to this dish at table to tweak it anyways. But yeah I do that as I like it hot!

Just marinate some chicken breast strips in 1 t each of turmeric, cumin, garlic, ginger; 1TBSP each of brown sugar, lime juice, fish sauce, peanut butter, and 2 or 3 T coconut milk.

                          It’s an everything homemade supper tonight. One hatch green chili chicken brat. One hatch green chili with cheese pork brat. And a side of beer batter onion rings.

                            Some wagyu beef shoulder was on sale last week. So today I put it in the croc pot, made rice, sautéed bell pepper and homemade avocado crema.

                                    Shore Lunch Beer Batter mix. You can’t beat it and it is cheap. The key is to use a light beer (I use bud lite) at a super cold temp when you mix it in.
