What's your next Meat Project?

    For those of you on the Livestream yesterday may have heard the news but I decided to sell my house and downsizing. The plan was always to downsize but we had a 5 year plan for that. The house I am in was an “investment” house and looking at the market, playing market speculator and realestate mogul I feel that it is the best time. Been in the house for 6 years and the comps show me at 27% over my original purchase value.

    ANYWAY, having said that I am soooooo SAD that unfortunately I won’t be able to do any meat projects for a while. I am thinning my meat locker to nothing, can’t start any salamis and cooking is reduced to bare necessities just to keep the house in pristine condition.

    Wish me luck because this is gonna be the hardest thing for me. I use cooking as mental therapy.

    The new house should be ready April/May and in the meantime I will be living in limbo.

    Dr_Pain good luck with everything. I hate moving but I too am wanting to downsize when the kids are out of the house. I want a smaller house with a huge garage with cooking/meat processing area.

      ND Mike Trust me I am definitely gonna have a nice cooking setup… and I am bringing my theater room. Obviously the stang is coming and needs a place to park. Other than I could not care less

        Dr_Pain Now, we can’t have all that equipment go to waste while you play real estate tycoon.

        I can hook up my trailer and be there in a few hours to pick it all up and make good use of it.

        Just want to help out.

            Ridley Acres I love the cartoon but still wrong.

            A river by definition is a water way which shed in bigger tributaries to end in the ocean

            A bayou by definition is a tidal river which actually run down towards the ocean but also flows backwards with tidal rises. They use to be called byway (2 ways) but they got bastardized because of the lack of written language in the colonial days that they became bayous

            Dr_Pain Another definition is that there are coon-a s s es and great cooking in the bayou. I is where all great seafood funnels through. It is where people know how to eat, have fun, and play good music.

            Simple enough.

                Good luck with the move to the new place Dr_Pain . Will the new home be on terra-firma or are you going to be up on piers for when the next big one hits?

                  processhead Is there such a thing as terra-firma in sound Louisiana (about 20 miles from the coast). I think my new land is 32ft above seat level so that makes me king of the hill LOL!!

                  Seriously the house will be brock on slab, definitely not on piers

                      calldoctoday HAHAHA! I actually thought it was because the river “passed ba-you house”. That way I could take my pirogue and get down when I get to yall’s house. Imma make the groceries but I’ll need your help to save 'em

                                Ridley Acres I think you hit the nail on the head when you said listen. I moved to Louisiana 26 years ago and I still can’t understand some of them, but I do enjoy listening to them because they are so entertaining

                                    Ridley Acres Because I am French I am definitely attracted to creole, patois or any variance from West Africa or Dominican Republic. I can only do it for a little while because my brain starts cramping because I try so hard to understand

                                          About to grind out the meat for 5 pounds of habanero barbecue and 10 pounds of mandarin teriyaki snack sticks. Every time I prep for this kind of thing with the saran wrap I can’t help but feel like Dexter.
