    Tex_77 where do you come up with all the ideas of the things you cook? You always seem to have “fancy” food with side dishes I would never think of.

    smoked 20# of polish this morning. Started with Excalibur polish mix, added 1T of garlic powder, 1/2t black pepper, and 1 1/2 cups soy protein. smoked 4 hours over a oak fire. Made them long to cut up into chunks for our shrimp boil in a couple weeks

                kyle That would be bad. I do think you recover but it can take Five years. That would be way too long without a steak!

                  Yeah a buddy of mine at work got bit too. Face swelled up after a roast beef sandwich. Was scary. He can only eat poultry and seafood. No pork or anything. Similar protein structure I guess. I read somewhere on one of these posts that someone said it may be time limited and get better after a few years. Hope so for his sake. I couldn’t imagine not being able to eat meat like that. Especially when you have someone like me bringing beef sticks to the office almost every other week. I tried to make him chicken jerky ones but it ended up tasting like dog treats. Will have to try again.

                    Surg seems to be different for everyone. She can eat a little pork. For 20 pounds of polish, I did 15 pounds venison ,5 of pork, that’s what i have done for the last 3 years and shes been fine. Also odd how some can eat venison. I dont think I could live a happy life without red meat.

                        Bob Stehlik Triple D is definitely great inspiration
                        Having said that I talked my wife into going to a triple D restaurant on two separate trips and tried a featured dish at each place, total disappointment, was nothing like the show, half the size, dry with little flavor
                        Now when I am watching and she comes into the room she rolls her eyes and says never again. LOL

                        glen Been to about 20 in my travels and only had 2 stinkers. It really depends on how good the chef taught the line cooks.

                              bocephus Thanks, I am going to look. That is a super idea. I have some from the old dairies back in the 60’s & 70’s that are supper heavy duty, beat up just a bit, but after all these years, still doing their job. However, I don’t know if I could get away with re-purposing them for the freezer. Your idea sounds much better.

                                Surf and turf night with a slightly island feel. New York strips, grilled marinated shrimp, coconut rice (no pic), and grilled pineapple glazed with butter, cinnamon, and brown sugar. Super easy and really good!

                                    Jonathon 5 days from purchase to smoker to freezer. Fresh sausage was in the freezer within 24 hours of meat purchase. Do like my stuff fresh.

                                        zbigjeff One was a small BBQ place, maybe the owner was absent. We had a variety of meats between the 3 of us, none was close to top quality. The in-house sausage featured on the show was bland and dry-dry.
                                        The other was one of the Juicy Lucy places, two thin cardboard patties with a whisper (had to look twice to be sure it was there) of cheese
                                        When my wife gets burned 2 out of 2, she’ll never go to another, especially since she never liked the show in the first place LOL
