    ND Mike I don’t really have a recipe but it’s an easy one to throw together. I made a batch of brown rice the day before so I was just using up some leftovers.

    I started by sautéing 2 small sweet onions for a few minutes, followed by 3 cloves minced garlic, 1/3 lb. mushrooms (I would have used more if I had them) and asparagus in that order a couple minutes apart. I then added enough of the leftover rice to fill the pan and stirred in about 1-1/2 - 2 Cups fresh grated parmesan, 2/3 C. toasted sliced almonds and 1 cup heavy cream.

    For the topping I used 1 C. panko bread crumbs, 1/2 C of the parmesan, a pinch of salt and pepper and combined with 3 TBL olive oil and baked at 350 for about 25-30 minutes or until the top browned nicely.

          We still have lots of Blueberries not quite ripe yet, hope to beat the birds & the chickens if we can help it. Lost out on the few strawberries.

                    Jonathon Okay, time to set the record straight.

                    Pecan Pies:
                    Flour - a plant hence vegetable
                    Pecans - a plant hence vegetable
                    Sugar - a plant hence vegetable
                    Butter - dairy
                    Eggs - High Protein

                    Conclusion - a very well balance diet. vegetables are like broccoli, dairy like milk, and eggs like a protein bar.

                    BTW - they do freeze very well.

                          Chef Jonathon Ya know, in my debate class of old and arguing my point to the jury to obtain a conviction, chef’s logic is pretty solid and should stave off all people external to this site that want everyone to go “total plant based” because that logic may tie them up in knots for awhile. Whew!!! Solved another of life’s lingering issues. Now, go and enjoy the pies and that treadmill.

                              Okay, strawberries won’t be ripe here until the end of June, beginning July. Looking at up to another two weeks at least after that for blueberries. We have a lot of wild berries on the property, always fighting bugs and bird for them.

                                      I just gave it a try with some butter while it was still warm. It is actually very good. Very airy and light. I was thinking it would be really dense, but it is not. Wish the loaf was a bit bigger, but I am surprised it rose as much as it did.
                                      So tonight for dinner is keto Chicken sandwich with my new bread, thigh meat, pesto and some cut up mozzarella cheese and tomato. Will post a Pic.

                                          Multi-ethnic dining tonight. Country style pork ribs dredged in kabob spices and grilled.
                                          Served with steamed Shanghai cabbage, home-made kim chi, steamed rice garnished with nuoc cham.
