What did everyone cook today?

Bob Stehlik this is the in the box #8 Cabella’s older one I found at a local pawn shop still in the box for 200 bucks. So far, I great pickup. Still in the box unopened.
GWG8541 Sounds like you scored! We got the Walton’s #8. We just do small batches and it’ll beat using the KitchenAid.
-
cdavis this was just 100% pork shoulder for the test run with the new grinder and the Dixie seasoning. I didn’t add venison yet, but plan on making some breakfast sausage with it in the future. It will be a 50% venison and 50% pork shoulder blend. I really like the Southern Style from Walton’s with the venison for breakfast sausage, but will be giving the Dixie a shot next.
GWG8541 I’ve never had the Dixie. Sounds like I better give it a whirl.

GWG8541 man that was a great find on a grinder. Congrats

Bob Stehlik I have a Kitchen Aid mixer, but no grinder attachment. The largest batch I have ever made at one time is 12.5 lbs of summer sausage on my old small kitchen grinder. It still works fine and is light and easy for a small job. This #8 is a big step up compared to that one. I would feel comfortable doing a 25 lb batch with it, but would need to get a bigger mixer. I only have a 20 lb mixer.

GWG8541 That is good to know that the Kitchen Aid also works well as a meat mixer.

GWG8541 looks good. What was your meat block.?
I second that! was this pork trim or cubed primal cuts?
Ridley Acres cdavis I forgot to mention my local grocery had pork shoulder for 99 cents a lb this week. I picked up the last 3 they had Saturday, which was the last day of the sale.

GWG8541 another good find. You’re on a roll.

calldoctoday Over the summer I picked up a 20qt univex planetary type mixer for around $70 that needed some repairs. I have the variable speed pulleys reconditioned and still need to put the new bowl lift housing on, but once I have that going it will be my primary mixer and has #12 grinder attachment. I’ll be sure to report on how well it performs, but wifey has higher priority on getting our second bathroom finished first.

Ridley Acres happy wife!
GWG8541 Absolutely, its my pleasure!
In its current state, the mixer would grind with the attachment, but I cannot lift the bowl for any mixing.

Ridley Acres You guys sure are good at finding good stuff. I am always looking, but not doing a whole lot of finding. Fantastic find.

I did my test run on the new grinder with some breakfast sausage. I made 5 lbs of Dixie and 3 lbs of Holly breakfast sausage. This was the first time trying the Dixie. I did a double course grind. I am really happy with the grinder and really like the Dixie seasoning from Walton’s. I made a few 1/4 pound patties of the Dixie with some eggs over easy and toast at breakfast for my oldest son and me. He is a Firefighter/Paramedic and just got off of his 24 hour shift. He really liked the Dixie seasoning. For anyone who hasn’t tried the Dixie, it is mild and doesn’t have a heavy sage taste, but is full of flavor.

GWG8541 Looks like you have it down good.

RafterW Both meals look delicious.

cdavis I got it because the wife is not a fan of sage. We all put in to much sweat equity to serve up stuff the family doesn’t like, so I gave this one a try.

Venison smoked sausage and shrimp jambalaya. Turned out really good. Served with fresh green beans, salad and French roll. Cooked in cast iron Dutch oven.
