    I ground my own meat, used some of it in the sauce and made some italian sausage, and used some finely ground dry age pellicle (double fine grind) and mixed all of it in a sauce that cooked for about 6hrs. The dry age stuff gives it a little texture and a little umami (mushroom taste).

      Surg Got my Mandarin Teriyaki sticks done today. Noticed that the perfect timer for protein extraction with this spice is " when you quit sneezing, it’s done." Sure tastes good though.PXL_20211115_003307528.jpg

        Sliced up the bellies this morning to package them up and sample. Not real happy with the maple. The flavor didn’t come out as I expected this time, it might be because I used some maple cure I had leftover instead of making my own as usual. Friends and family will get gifts of bacon that is a bit saltier than for my tastes. Now the pastrami bacon on the other hand stays right at home, it came out better than I expected. My only change my be a bit less salt, and a bit more brown sugar. The pickling spice really comes through. IMG_0255.JPG IMG_0256.JPG

                    A little oven baked catfish. Jamieson22 I did not fry it this time. Its baked with a spicy cornmeal breading and it tastes great. Just added a salad and a beer.

                      HerbcoFood Nice try at it being a “healthy” meal. Throwing Kale into the mix with bacon and ham broth makes it healthier. Right???

                                  HerbcoFood that looks great. The Hillbilly in me was hoping for turnip, collards, or mustard greens but kale will work. That meal not only looks great, but is well balanced. Perfect 👌
