Actually let them get away from me. Hit 185+ while still wrapped in foil so when I went to uncover them they were fall apart. I just pulled them at that point. I usually like them a little more on the bone personally.
Ran it hotter than usual with it set to 275, but the MES smoker was acting quirky and my standalone thermometer was reading 230s. Didn’t even put the temp probe into it until unwrapping them and saw they were hot. Still juicy and tasty, but hard to cut neatly. Was thinking of running an empty smoker with a couple different temp probes to see what was going on. Weird for it to linger so low below temp especially on a hot day.

Surg I have seen some really weird things happen with temps that make no sense at all some times. Just as you think you have figured it out, something new will pop up to disprove what you thought. I suppose that makes the fun & sport of it & keeps us on our toes with it all.

Surg My wife was gone for the weekend so decided to have ribs for her when she got home tonight. Ribs are over of her favorite smoked meats. They turned out pretty good. Don’t look as good a yours though.PXL_20210628_002951915.jpg PXL_20210628_004024328.jpg

wdaly Great job! What Mama likes, Daddy takes care of. I would be happy to try any of them as they all look good. Besides, there are more than one style of ribs to do, & that is just the cooking part. So long as they are not Rubber Ribs, they will fly.

twilliams Yeah, its amazing and annoying how little we know still, I figured that getting it once would be it but I know of 2 people who have had it twice and I know someone in Mass. who had the vaccine and still got Covid. Luckily I still don’t know anyone directly who has lost their life to it but I have an older mom and some other not so healthy family members so it’s in the back of the mind. Personally I am still taking vitamin D and C every day to keep my immune system up but the only thing I will tell people is “talk to your doctor” don’t listen to CNN or Fox or anyone on TV. I was told by one medical professional that having it means they wouldn’t want me to take the vaccine and I talked to another who said since it has been 3 months or more I could get it. Now, these were friends cause I don’t go to the Dr cause I’m a big sissy and don’t want anyone poking or prodding at me!

Jonathon I work in the health care industry at a major hospital. To be clear, I am not a clinician. The bottom line is it definitely a personal choice. There is way to much we do not know, and yes there was a big rush in attempt to get ahead of this. Having said that, I opted to get the vaccine after a high school friend contracted COVID and died in about 2 weeks. I had a heart to heart with my family Doc and he thought it would be best in my situation. I think you hit the nail on the head by doing the best that you can to take care of yourself and making sure your nutritional in take is on track. What is good for one person, may not be the best option for the next one. Only time will reveal the details of all of this. To add levity to the topic and since I am not a medical practitioner, but do drink with some, I highly recommend good Bourbon or Tennessee sour mash help kill those bad germs. Enjoy life, it can be way to short.

GWG8541 I agree with bourbon to keep the germs away. I remember an interview with a 110 year old woman. They asked her what was her secret to good health. She sad 1 pack a day and 1 good stiff drink every evening.

Now, I can’t say that the cigarettes added anything, but I’m sure the bourbon did.

Tex_77 Cold, crisp pickles are a MUST on my burgers! I love that contrast of hot and cold.

Joe Hell Those cold crisp pickles with a slice or two of Jalapeno & something lemony will go a long, long way for keeping the cool on a hot summer day.

Joe Hell cooling is on the way. We are at 88 degrees for the high today, compared to 108 yesterday. The only thing the humidity shot up this morning with the cooling coming in off the Pacific now.

johnsbrewhouse Hang in there! That is about the same thing it did here after a month in the hot seat & no rain. It was nice here with out the humidity too. I suppose the cool must have been coming from the Gulf of Mexico though, as it could not have come from the Pacific. The Gulf is usually hot though, real hot.

calldoctoday My brother is in Ovilla TX, talked to him yesterday, said it was 73 degrees and rain. My ex sister in law just got here from Grapevine TX with my great niece this morning for a week thinking they were going to see cooler weather. Just warmer than the Dallas area now, but they are headed for the coast so it will be cooler. We are suppose to be more normal next week.
