    Everyone’s meals looked delicious. I’m sorry I can’t post on them all because I was busy and fell so far behind on the posts. I hope everyone had a great Memorial Day weekend. t looks like you all ate well. We cooked up some Cornish game hen halves on one Traeger w/bourbon brown sugar pellets. Also did some “Cheater” Pastrami (corned beef soaked overnight to remove salt)on the other Traeger w/Maple pellets. I did Denny O juniper berry rub on one(the lighter colored half) and did Katz’s deli pastrami rub on the other half(darker colored half). Both were just great.     Bob Stehlik Bob do you have Katz Pastrami rub recipe, or the one from A-Ribs? Or was this something that you got out of a bottle?

      Denny O I had googled Pastrami Rubs and found several recipes including Katz’s. We actually liked your Juniper Berry the best. I use Juniper berries when I make pickled Herring and pickled eggs. I’m on vacation down in the Ozarks now and using my cell and tablet. I’ll try to remember to post it when I get back to Colorado in 10 days. The one thing I did to both Pastrami’s was to use Dijon mustard as a glue and I soaked my store bought Corned Beef for 24 hours to desalinate.

        Bob Stehlik I’ve been thinking about using dijon for the binder. I think I will for the flat that will hit the smoker tomorrow. Thanks for the nudge to use it.

          Did an omelet for breakfast this morning since we had some leftover taco meat and beans in the fridge. Had not had one in a while and thought why not have something different today.IMG_0409.JPG

                        Here are some beef chuck trimmings that were marinated in a Soy/Worcestershire marinade & put to pasture as shish kabobs with onions, cherry tomatoes, & peppers from the garden, Baby portabella mushrooms & olives. Smoked in Apple wood for about 1 hour & 15 minutes, then seared on the hot iron.6b298d79-2e0b-429f-ac79-e7ad4304766d-Beef Shish Kabobs.jpg The beef was very tender & tasty with this set-up.

                              calldoctoday All my omelets come out like that, I don’t use the fancy French style and move everything around. I let my pan do all the work, then just flip, fill and roll out of the pan. It was filling, had fresh cilantro inside too.

                                calldoctoday wow peppers and tomatoes already. Mine just are getting their first blossoms. Our squashes and green beans are just coming up too.
