About to put it on, I used a seasoning that isn’t sold by Walton’s so I won’t say the name.

HerbcoFood I’ve cut thousands of whole hogs, but never saved this. Always trimmed the lean off for sausage. Cooked right I’m sure it’ll be tasty. It’s a fatty piece with bones and cartilage not a lot of lean meat.

gus4416 I used my costco cash back for this purchase, so it was one of those free but not free purchases if you will.

Deepwoodsbutcher I am pretty excited to cook it, I think while I am smoking a whole bunch of chickens next Sunday I am going to toss it on there.

Tex_77 I just read the article you sent, seems like this is going to be a staple around here if it turns out like I am imagining it in my head.

kyle You talking about the pork? Yes, I am going to do just a rub. I tend to only brine fowl and cured meats.

Here is the final brisket pic, I also made some homemade hand cut fries, and I used the Spiceology Rosemary Dijion seasoning to make a dipping sauce for the fries.

Smoked a venison backstrap, let it chill for a few hours and served it with a homemade chimichurri sauce.
