Enjoying some now!PapaSop $10 boneless ribeye, pork chops 1.99 at a little meat store in Cloquet MN. You can google B&B Market and see their weekly specials. Bacon has really gone up in price tho. I used to get 15# box for $38, now I see its $67

The bone in brisket strips are usually what you cut off the spare ribs when you trim them St. Louis style. I am guessing the center cut boneless is what Tex linked to.

HerbcoFood I’ve cut thousands of whole hogs, but never saved this. Always trimmed the lean off for sausage. Cooked right I’m sure it’ll be tasty. It’s a fatty piece with bones and cartilage not a lot of lean meat.
