lkrfletcher I ate really well tonight. My son cooked a spicy Korean chicken and some green beans and I ate too much, but those pics are making me hungry again. The elk enchiladas look great.

lkrfletcher They look great, I might have to try elk enchiladas. Hadn’t thought of that. we have made them with just about everything else. Made some this summer with mushrooms for nieces who are vegetarians, others tried them and liked them also even though we had chicken and pork.

bocephus We all have to be flexible in what we feed some of our families. Sounds like you’re very versatile in your approach (aka: using mushrooms for the veggie people). Keep it up and have a good rest of your day.

zbigjeff Thanks, I had to use purchased mushrooms this year because it has been so dry in MN where my nieces live. Their father usually picks wild mushrooms and I was going to use those, maybe next year.

I think this is about the misdeed that Jonathon performed on that poor innocent ribeye. lol

Wish I could say I never made a rookie mistake like that, but then I’d be lying.
