bocephus glen , I think the “real competitors” would be surprised if just regular old people (I don’t mean age) did the judging. For me, if a steak tasted great, thats more important then if the grill marks are straight.

kyle I agree, taste should be the most important thing not presentation.

He lost me at trim a ribeye! I don’t cook for competition. I cook for comfort and get in my belly!

ND Mike I agree fat is flavor, only trim after grilling for steaks.

twilliams I agree, a little seasoning to enhance the flavor, but I want to taste a good steak.

Here is what the SCA looks for from their site:

Steaks are judged on Appearance, Doneness (Medium), Taste, Texture
and Overall Impression. Tie breaker: Taste, Doneness, Texture, Appearance, and Overall
                      Impression.

Sounds like way to much work for me, throw on the grill with steak and roast rub.

bocephus That’s the problem with competition anything, it turns it into work & we are doing that usually for pleasure. Like someone trying to convince you to be a fishing guide or something & bowling over that your not interested. You are taking something that is to relax for & enjoy life & turning it into work.
