      Did loin back ribs three ways. Two different dry rubs and one with just salt. All came out great.

        The meaty bits get chopped up and added to a bowl of vermicelli noodles, lettuce, fresh basil, cilantro, crushed peanuts, green onions browned in lard, and nuoc cham, a seasoned fish sauce based condiment.
        The complexity of flavors in the finished dish is hard to describe, but is simply amazing. We will be doing leftovers again tomorrow, because once is just not enough. Plus I grilled enough for the whole neighborhood.

        My wife gets the credit for all the hard work and creativity. I just grilled the meat/shellfish.

          I left out the encapsulated citric acid on this batch because I knew I would not have time to smoke it last night. I like the flavor both ways. The ECA adds the tang which some people like and some people don’t. I eat just about anything so it doesn’t matter to me. I used the willies snack stick seasoning broken down for a 5 pound batch. Just used the sure cure alone which from what I’ve gathered requires a rest of at least 6 to 8 hours for the cure to works it’s magic.

          Use the leftover meat that didn’t make it out of the stuffer for for breakfast this morning. Not sure if there’s another post on it but would be interested to see what people use the leftover un-stuffed meat for. I usually just fry it up or smoke it as some kind of patty.

              I was out of cell service in my home away from home, channeling my inner PapaSop . It was a great weekend at one of our favorite State Parks/Lakes. I had a chance to break in a Fathers Day gift from one of my boys. Its a carbon steel skillet that is versatile and a great all around cooking piece.

                Surg good looking ribs. My MB has 5°+ variations inside based on probe placement. The built-in probe I now clean off between smoking, mfg recommendation and that has helped a bit. It still has hot spots and is a bit more temperamental when it is hot out as well as the propane smoker, but I expect that because it isn’t insulated at all.

                  Not me but my wife made some of the best chicken french of her life this weekend for me and friends. Seriously she NIALED everything about, the chicken, the sauce, everything perfect. here is why I even bring it up. She lost her sense of smell and taste during covid, then got it back but now ANY oil smells rancid to her! She had me smell the sauce like 3 times, saying she thought something was wrong with it. I was making salsa while she was in the shower, she came out and we had to open windows, turn on air freshener and light some candles because of Cilantro which she used to love!

                  Patrick (@The-Fridge-Raider ) sense is totally back yet either. I am considering testing that stupid burnt orange thing with him and then if it works trying it with her!

                  Jonathon I make my own salsa because I can’t stand cilantro. I have heard it is a love it or leave it kind of thing. Sorry your wife no longer likes it though.

                      Tex_77 Ive used that Eat on a few things now and I very much enjoy it for BBQ’ing. It has a nice sweetness to it without being over powering

                          Jonathon my wife also has issues. Hers is anything with cream. So sour cream, cream cheese and coffee creamer are her worst ones. She just can’t eat it as it doesn’t taste good and she normally loved them. We have been hearing that when people get the vaccine those go away and taste and smell returns to normal so she is contemplating on getting the vaccine just for that purpose. I’m still extremely skeptical of it. I believe I had COVID twice already. Nothing to do with my taste and smell though.

Now, these were friends cause I don’t go to the Dr cause I’m a big sissy and don’t want anyone poking or prodding at me!

                              Jonathon I’m with you. I developed a heart arrhythmia two weeks after symptom onset. Am now on a blood thinner for a while. I was told by a MD not to get the vaccine because I still have antibodies. I got it in October and my May test still showed antibodies. As long as I have antibodies, don’t see much need to get vaccinated. That is just my opinion and my choice. Everyone has to deal with this issue their own way.

                                  I had COVID in November and got the vaccine in May with no adverse affects other than a sore arm from the shot. I have many relatives in the medical field and they are all getting the shots. Some like me had COVID also. Just my two cents.

                                    Jonathon My wife had covidalso and had to wait 90 days before she got vaccine. got her vaccine 2 months ago now and had no problems
