    Austin Jonathon cant find a whole lot on fish breading/batter. I use a product made here in my home state of Wisconsin. 100% better than shore lunch or frying magic. Multiple uses from dry mix to add water or beer for batter. From fish, pork, beef and seafood to vegetables such as blooming onions, deep fried pickles, deep fried califlower and green beans. If youd like to try it out i can send you a bag. Let me know

          twilliams fish, Hard to find a good mix that is free of MSG. I have just started making my own, but would love to find a good brand.

                Chef are you allergic to MSG or just dont prefer to have it in your foods. Something i guess i never really pay attention to. Maybe i should

                  twilliams If you don’t have a problem with it then I wouldn’t worry about it. Some people get headaches and others get other side effects but it has never been (to my knowledge at least) credibly linked to cancer, if that was your worry. And yeah, send us a little and we will check it out, thanks!

                    twilliams Not sure you can call it an allergy, but when I eat it, I get a very dry mouth for about 3 to 4 hours, and slight upset stomach and headaches. In terms of recipes, the food industry used it because it tricks taste buds in to amplifying the intensity of the sensation. It is so much cheaper than herbs and spices, which gives them the incentive to substitute. In term of my food business, I have observed that people tend to spend a fair amount more for things like ‘all natural’ or ‘organic’. I usually market to those people who are willing to pay a little more for a quality product. As i was typing this, I saw Jonathon reply, and he is correct, i know of no long term adverse health threats and for those who are not bothered by it, no problem at all. From a marketing standpoint, about 40% of consumers try to avoid it.

                        I’m not able to find a conversion for making only 10lbs of the Gyro Brats rather than the 25lbs,
                        like you have for so many of your seasoning packages?
