    glen Well I finished my second batch of snack sticks and I will keep making them. Total cook time was 4 hours and that was because my wife bought me a new smoker and I am still learning. The sous vide cook time was 1/2 hour. So much nicer not starting the cooking at 6AM and pulling at 8PM and than cleanup.     glen I was just going to try the ECA but the last batch you helped me with turned out so good I think I will just make the jerky sticks let them sit overnight and put them in the dehydrator. Next weekend I am going to make pepperoni snack sticks. Will let you know how the jerky turns out.

    Lost River Jones I only know one thing if your using ECA they should be smoked right away. If your going to hold them for a while do not put the ECA in the following morning just before smoking. Hope that helps. I only wait until the next day to smoke because it takes so long. I start my sticks about 5AM and they finish around 3 PM

    glen Thanks Glen. I am getting excited to try the sous vide method. I was discourage with the amount of time using the smoker. It became a 2 day project. One day prep and stuffing and the next day start the smoker at 5am and maybe finish by 7pm.

    I am not sure if it was that stretchy. It was hard to get off my hands because of being very sticky. I have a good size dough mixer that I was using because I was so happy not getting my hands so cold because I have hand mixed turkey for snack sticks without casings. I am learning and will try and duplicate what you showed in the video. I ordered the GrillEye from you and will test my temperature in the smoker when I get it. If it comes down to it I will get a meat mixer because my kids want snack sticks for Christmas. One more thing would it be better to mix just seasoning and surecure without the binder to test the protien extraction.

    Lost River Jones I only have had one really good batch but that is because I am learning. I got great protein extraction but it took long because I mixed by hand. The next morning added the ECA and they came out pretty good. Getting ready for my next bat h because my boys are eating them all.

    glen You have always given the correct road to begin my journey. I was so discouraged with the amount of time to make the snack sticks I did not want to do them anymore. Now if the sous vide works I will be making sticks a lot for the family. I will get my cvpc coupler on Monday and hopes to have my sous vide vessel made and ready for the first batch.

    I have a question for Johnathon. I believe yesterday you mention something about the Green Mountain Smoker. I have been testing the electric Masterbuilt for temperature control with my new (but old version) GrillEye wirless thermometer. The temperature difference is almost 20 degrees from the top to bottom. I can work with that but I don’t have a constant temperature swing. I don’t think I will be successful with the snack stick making with these obstacules. I am looking for a new smoker that will do the job and one other thing on my wish list, I want the smoker to be able to sear meat. If you own a Green Mountain I wanted to find out what you thought. I have a Lynx BBQ that is almost 20 years old and I bought it because I never wanted to buy another but the problem is I will never be able to sear my steaks on it. I will give you my feed back on the GrillEye next week after I test it this weekend. One more thing since my avatar on the live stream was blue I joined the blue team. GO BLUE🤑

    Hi I am Bob from Santa Barbara CA… I have been making jerky for sometime. I have an electric Masterbuilt Smoker. My sons just gave me a Lem Canon to make snack sticks. That want me to figure out how to make a good pepperoni snack stick. Looking around I found this website and very interested on how to make sticks. After a while would like to upgrade to grinders mixers and stuffers.

    glen Well all I got to say Thank You Glen. My two batches are done and I have to say the second batch went very well. Even to the point I will continue to make restructured jerky along with my muscle jerky. I want to try so many different kinds of seasoning but I might have to wait for a while. I have a lot of seasoning right now. Wish I could swap with other users if they lived close by. Anyway I am going to upload a few pictures!!Restructured.jpg
