    Ridley Acres Years ago I used to uncase the brats to make breakfast patties. I’d add some mare ground black pepper and marjoram an it was almost like German sausage patties. Love a good brat patty or German sausage patty with a fried egg on a hard roll, however hard rolls are impossible to find in Colorado, they must be a WI thing! A good Brat is good at anytime of the day.

      PapaSop Every Sunday morning after Mass we would stop and get hard rolls and hot ham for breakfast. I really miss that. As kids we would poke a hole in the hard roll and stuff it full of hot ham. Sure was good!

                Hot ham and hard rolls on Sunday was/is a Wisconsin thing growing up. Never could find a decent hard roll outside of the state. Not sure why that is, sort of like trying to find a decent bear claw or elephant ear.

                    Here it is in all its glory. It turned out fantastic. Is 2 1/2” on top and 2 3/4” on the bottom. I will be making some sausage this weekend and test it out.

                              Grimpuppy that looks awesome. I would be interested in purchasing one of them. Let us know how well it works. Now that you have that one you could make it thinner and add a piece under the clear covering or have one made with a step down. You could use that one as reversible.
