    I am auditing my freezer as I really need to clean it out to make room. So 8lbs of axis roast is thawing so I can make some smoked pastrami. I will be smoking it Sunday afternoon. So the great thaw begins…

    HerbcoFood I love pastrami! Can you do a walk through on the process? I would love to make some.

      Had some left over Willies that we put in 1 lb bags last February because we were rushed for time. That we’d it out and stuffed it today. It had sure gel in it. I added about 1 cup of water and hand mixed again until it had good stickiness to it. It worked out well. Took it to 135 in the smoker then put it in a hot water bath in the electric roaster pan. That is a game changer!!!20211019_121225.jpg

        Finishing them in water is definitely a game changer. Your water looks so clean compared to mine, or maybe the picture is when you first put them in.

                ND Mike great to know that freezing at that point can still turn out a great product later on. Only having to clean the stuffer will definitely cut down on cleanup time for the subsequent batch.

                    ND Mike looks like the roaster worked out well. I love mine. How many lbs do you have in there? 12.5lbs fills mine up pretty good.

                            cdavis actually picked up a 22qt roaster on marketplace for $30 after reading the conversations here. Figured it’s a cheaper alternative to a larger sous vide for now. Look forward to using it on my next batch of snack sticks. Was curious if anyone has tried the Mandarin teriyaki seasoning? Thinking about doing a batch with that and some high temp hot cheese in half of it.
