Use chili dog seasoning and beans

First nix the beans. Real man chili has no beans. Try taking the cumin seeds and peppercorns and some corriander seeds and toast then in a dry frying pan.
Go slow as they can burn easily. Then grind them in a spice grinder. This really brings out the favor. And for heat try purreing some canned chipotles. -
All chili needs beans… Ok, here we go again

There is a product called better than bouillon ( can be found online) that makes a chili seasoning paste that is really good. I have used it to rub pork bits and make hot dog chili sauce with great success! You would likely need to mix it with some water for better distribution but I think it would do a good job but you would still need to figure out the quantity.
One note that you may want to consider is that this product will make a deep red sausage as it has a lot of color to it.
I think this would be a great place to start!

I won’t get into the whole w/beans wo/beans debate. All good chili is good chili, regardless.
On a broader level I would propose that food names like summer sausage are based on some traditional and historical flavor/texture profiles that are pretty well documented.
IMO, discussing “summer sausage” and “tastes like a bowl of chili” in the same sentence is a contradiction in terms.

dbarbour Probably too late but using the |Sweet-Chili-Flavor-Snack-Stick would give you a somewhat sweet tasting chili flavored summer sausage. It is Chili like a bowl of chili not chili peppers.

@dennyo Just remember, Alton Brown is train in acting and cinematography. Quite a liberal nowadays.
I wouldn’t trust his opinions on anything to do with food. Might just be why he had to remake many of his shows.
Then again, I’m getting old and cranky…

I think it’s less about beans or no beans and more about whether it identifies itself as chili.
