    My first meal cooking it myself since getting COVID last week. Some beef fillet in the carbon steel, a few shrimp and a baked sweet potatoe. Easy, but delicious. As you can see from the screen shot, I was watching Jonathon doing the livestream while trying to cook.

    GWG8541 I think several of us were cooking while Jonathan was playing, your dinner looks great. I had a Costco chicken, with orzo and carrots.

        Had a need to process aged cherry and roma tomatoes. So, I roasted 3 lbs of tomatoes, red pepper, carrots, onions and celery with the normal herbs of basil, oregano, thyme, s&p and 5 cloves of garlic. Used another tool (Vitamix) to puree all materials.         zbigjeff That looks wonderful & soul satisfying on a cold night. You can’t get much better than your own mater soup & cheese samwich, just a dab of sour cream.

          Something pretty simple. I slow cooker a venison neck roast, shredded the meat and made hot Italian sandwiches for dinner.

              zbigjeff Vacuum marinated for 4 hours. Sous Vide at 122 for 3 hours. Seared it with a seerzall. Then, accompanied it with sautéed mushrooms, onions and broccoli and seasoned it with the butter/garlic sprinkles. Summary: I really liked the dry marinate of hatch chili with citrus. Just enough kick to let you know it’s there. But, not overpowered. Success!

                calldoctoday I think the best way to cook up a neck roast is in a slow cooker. Very little waste and you get a good broth.

                    calldoctoday I have done beer, wine and beef broth. It depends what I am in the mood for, this one was broth some veggies, dried mushrooms, and spices. Browned up, cooked until tender. Remove the roast, shred the meat, strain the broth and adjust flavor.

                      craigrice My wife and I cut most of the salt out and now I am sensitive to salt. Can’t hardly eat regular sunflower seeds, I always look for low sodium.

                              YooperDog wow, that looks delicious. Using the nexk roast for sandwiches is a great idea.

                                  Jonathon’s soft jerky!!! Well worth the wait if you ask me. I did have to improvise with a smoke tube and my pellet grill since I don’t have a dedicated smoker. I used my BBQ thermoworks setup to run through the cooking schedule. So far so good

                                    I am back in spurts. Some days are great, some are good, and some I shake so badly that I cannot type. One day at a time and baby steps is the way to go. I have tried to push hard but unfortunately have suffered the consequences of my actions.

                                      Another taco night lastnight. Tacos de carne deshebrada. My boy only has a few teeth, so he got the “deconstructed version” He had all the fixings and ate it all. It amazes me how much a toddler can put down!
