    For the crispy pork belly I followed the steps here

    The salt is on top of the skin only to dry it out and add some but not too much saltiness.
    Next time I would probably score the top and air fry after removing the salt. Would ideally like it more like Cracklins.

    The char Siu is like boneless spare ribs and for that I use a package seasoning by NOH.

      Surg Is this skin on belly from the store, meat market, or did you go farm direct?

        When I buy belly from an Asian market, typically it is skin on. At a local butcher or from the farm you have a choice on or off.

            the last picnic that I bought was skin on but @ .99 per. lb. I didn’t care LOL they are on sale this week from the local grocer just in time for xmass give away meats $ 2.59 /80/20 burger

              Surg it must be according to the region and where they source them. Our COSTCO have never had skin on.

                  RafterW I just smile when people still question me about having the amount of cast iron skillets. That usually happens when they return from someone else who made “X” in a CI vessel. Then, they catch themselves and tell me to be quiet.

                              HerbcoFood I went for years just frying it. Last year decided to try the grill. I can’t believe 😪 I missed out on this all these years 😫.

                                cdavis that looks great. I never used the basket but every time I see one I wonder if I should get one. Looks like it may be worth it.

                                  Surg the basket is 100%worth it. I’d never seen one till I think it was GWG8541 showed a picture using one .I asked him about it and ordered 2 that day.

                                    Big storm heading this way so I will be busy plowing tomorrow and won’t have much time to cook, so I did it all today. Two tenderloin fillets, mushrooms, onions and roasted brussel sprouts with bacon and blackberry ginger balsamic vinegar. For later some Texas Twinkies and armadillo eggs.
