I’m not sure how many of you are familiar with this but I grew up on that stuff (French Canada). Good old Hot Chicken Sandwich with peas. Shredded chicken and mayo on white bread with a beef and chicken thicken gravy

In the South where I live they think I’m crazy!!

Should I post the recipe for you in the User Recipe? The sauce is pretty simple and it is usually just leftover chicken… and obviously the peas. I like to have it with French fries on the side to get that fatty crunch element. This is one of the only time I eat fries with ketchup because I need the vinegar to cut in the fat. Most often it is mayo and fries πŸ™‚

Dr_Pain My wife likes a hot beef sandwich, very similar but no peas, although I think she would like the peas on top.

Depending on the occasion I will gladly use malted vinegar (like fish and chips!)

Dr_Pain in the part of Canada where you resided, was ham-bacon readily available?
I had read somewhere that parts of Canada serve it as do Brits.
As I understand it is a boned-out pork ham roast wrapped in a pork belly and then cured, smoked, and then thick sliced across the grain so you get a ring of bacon around a slice of ham.

                    It sounded delicious to me.!

It was not a staple at my house but I did have it a few times at my best friend at University. If I understand what you described we called it porchetta.

It is very much a comfort food. Even though my children at American they actually ask for it, our traditional meat pies and my world famous Tourtiere du Lac St-Jean
