What did everyone cook today?

YooperDog zbigjeff I would recommend this place to anyone. Its away from the touristy stuff that I can’t stand down there. I know it pumps the local economy, but its ruining what I love about the Smokies. I got lucky getting this room back in February. It was the only one available because of a cancelation. They have alot of repeat customers and are booked out about a year during peak times, which is becoming year round down there.
GWG8541 yeah it was crazy traffic on the major roads and always road construction. Once off the beaten path things were pretty much smooth sailing. I prefer mom & pop places and hole in the wall joints off the beaten path. I will look into your recommendation, maybe a winter break from the UP before syrup season begins.

calldoctoday We certainly needed it yesterday and probably today with this cyclone bomb hitting us. We are getting rain, wind, thunder and lightening. Suppose to move ashore today. The coast is getting swells of 30 ft., and wind gust of 70 mph. Glad I live between the mountain ranges, some shelter from the big wind.
johnsbrewhouse I hope you all did OK with that thing coming through. I read that it brought months of rain in just a few hours. Glad to hear you are sitting within a little protection too, good wind break.

YooperDog the UP is beautiful also. Especially in the fall. The winters can be a little harsh.

Was going to clean up leaves, but I’ll wait until this weekend when the weather breaks. My walnut tree is pretty bald now, got to move the leaves to find the rest of the walnuts.

GWG8541 Sometimes it’s good to let someone else do the cooking and just enjoy a good meal with someone special. Well done.
wdaly the wife definitely deserves the get away after putting up with me for all these years. I love hiking the mountains. We have also spent the night on top of Mount LeConte, which is the peak in the photo at breakfast. Its the 3rd highest peak in the Smoky Mountains at 6,593. The only way up is on foot and they have a Lodge on top with cabins. They serve breakfast and dinner family style. Its resupplied 3 days a week by Llama’s. I’ve done day hikes to it and spent the night. Its another great get away thats not in the touristy crowds of the smokies. LeConte Lodge is pretty primitive and like stepping back in time over 100 years. The cabins are equipped with propane heaters since it can get well below freezing, even in the summer months. The Lodge only operates from May to October, due to the weather.

cdavis The dogs are on that, they are sitting under the tree waiting for them to show up. When I hear my male barking I know he has a friend in the tree and I head out with the pellet pistol. It’s nice with no leaves no, I don’t have to look so hard.

GWG8541 I love places like that around the country. Visited many while I traveled for 25 years and went back to some of the them both in the south (Charleston’s John Rutledge house) and in the Poconos (just can’t remember the name right now). Those places are sooooo calming. Great that you treated the boss to a fantastic place. Good for both of you.

Lastnight. Breakfast for dinner. Southwest breakfast casserole. Been getting a beef/pork blend in 2lb lugs from kroger. Was really good in this and costs $6.50 for the 2lb lug. Can’t go wrong with sourdough and a red beer either!

RafterW I hope Kroger keeps that blend. I have used it for summer sausage, snack sticks and hot dogs. At an 80/20 ratio it’s pretty versatile.
Also currently around $2.50 a lb. -

I’m not sure how many of you are familiar with this but I grew up on that stuff (French Canada). Good old Hot Chicken Sandwich with peas. Shredded chicken and mayo on white bread with a beef and chicken thicken gravy

Should I post the recipe for you in the User Recipe? The sauce is pretty simple and it is usually just leftover chicken… and obviously the peas. I like to have it with French fries on the side to get that fatty crunch element. This is one of the only time I eat fries with ketchup because I need the vinegar to cut in the fat. Most often it is mayo and fries

Dr_Pain My wife likes a hot beef sandwich, very similar but no peas, although I think she would like the peas on top.
