    If anyone has read the “only a cheese head will know” thread started by Jonathon, this is where the inspiration came from. Opening day was this Wednesday for dove here in Texas, it’s a day I do my best not to miss no matter when it happens. There is a song by Pat Green called, “West Texas holiday” that is about dove hunting. So here it is, grilled dove over hatch chile bacon, baked (bread) cheese, topped with a slice of avocado and jalapeno.

        calldoctoday Yeah, I try to make different things with dove, the bacon wrapped is always a solid choice, it just gets old.

          Also along with my app cooking frenzy, my wife decided at 11 am she was crazy pulled pork. So I quickly lit the fire ran to the store, cubed up the pork butt, seasoned it and put it into a foil pan. I stirred it about every hour so all the pieces got some smoke on them. I then wrapped it for a few hours and cranked up the heat. This may be the only way I do a pork butt from now on, which is only once every few years.

                  zbigjeff Most of the hunters are understanding, very few are problems. We have had a couple and we have troubles with, we Meth labs here in the woods as well. I carry my Glock and have my old City ID with me, as well as my phone. I know most of the Game wardens up here and the Deputy that patrols our area. They all know who I used to work for now, so we have a pretty good understanding that if I call, we have a problem. Most of the people who wonder in, will leave once I tell them how close they are to people living and camping and that they can go up the road into the National Forest and hunt to their hearts content. I even tell them we they can go and what to watch out for.

                  johnsbrewhouse I always carry one of my Glocks in the woods with me. I am more concerned with 2 legged animals rather than the ones with 4 legs. I guess I have trust issues. Be careful with the dope/meth encampments.

                          We did our Labor Day meal on Sunday. Set up bot Traegers and smoked a pork shoulder for pulled pork, did a small slab of beef ribs, four country pork ribs, sweet potatoes and smoked mac & cheese. Also made Rotekohl, German braised red cabbage with bacon to go with the pulled pork and pork ribs. Everything came out excellent. It’s just the Wife and myself so today we vac packed and put in the freezer for when the snow flies.

                              GWG8541 Me too, the meth maggots do worry me to much. We roll up on them all the time when we are hunting. They are scared sh_tless when they see the long arms and pistols, along with us being on quads. Most of them aren’t to bright. It’s the grow ops we have to worry about, not so bad not that they legalized dope, no profit left for them.

                                Baked some cinnamon rolls and a blueberry pie with my daughter today. The rolls don’t look the best but they tasted great!

                                        tonight’s supper was [no pics] lasagna and garlic bread home made Italian sausage ground beef that I ground and home canned tomato sauce

                                          Did one slab of baby back and one slab of St. Louis style ribs on the pellet smoker, and picked the last of the green beans from the garden; seasoned with end pieces of dry rub bacon. Thanks to ND Mike I did my trial run at the Black Forrest Chocolate Cherry dump cake before camping next month. It was all delicious and I ate way too much today. I hope everyone had a great Labor Day.
