      I made bbq’d seafood pasta: Everything was cooked on the bbq pit except for the bucatini pasta, shrimp, scallops, clams, pancetta, onions, garlic in a white wine butter sauce: https://www.instagram.com/p/CRc6-lZJPqS/

        Slow Smoked Ribs & Shank I Resized.jpg Slow Smoked Ribs & Shank III with Corn Resized.jpg Well, I finally was able to squeeze in the 4th of July effort. We enjoyed these slow smoked ribs and shank (no crutch used, just slow smoke) that I made every effort to produce something halfway decent while writing reports & working at the same time thought the holiday. Of course it took us several days to chew through these delicious morsels that were paired up with smoked corn on the cob, potato salad, basic BBQ beans, & a tomato cucumber watermelon salad from the garden. No time nor any room left for Strawberry Ice Cream though this year.

            Greek Smoked Salmon I Resized.jpg Then last night, while still working & writing, we prepared this delicious meal of Salmon marinated in Walton’s Cyclops Greek marinate, with just a little extra Walton’s Greek spice, then smoked for a little over an hour with a mix of Peach, Pomegranate, & Fig wood. It is very good & the Walton’s Greek seasoning & marinate really does the trick. Margaret also made up a medley in the oven of potatoes & acorn squash, green beans (still just a few), onions, garlic, & peppers from the garden along with a watermelon, cucumber, asparagus salad from the garden with some extra cherries, Bonanas, & Peaches from the store.

                                    gus4416 NJ, but ever since my wife introduced me to them I insist that whenever my in-laws go up there they bring me home a bag or two. Between those and the jerky I should be up pretty much all night guzzling water. Well worth it though.
