Great podcast. It’s crazy what one can accomplish once they put their mind to it. So I found it interesting about what Gery said about andouille not actually being a ground product, but more of a chopped product. To accomplish a traditional texture in andouille could one grind the meat through a kidney plate a couple times then stuff, or would it not stuff well? Jonathon

Tex_77 Yeah, you’d get it to stuff but it would be difficult. You’d absolutely have to add water to it…actually, I am taking that back, or at least how certain I am of it…I’ll try it and report back. Might be a bit.

Jonathon i watched it and i dont know, someone must have been cutting up onions or i recently got allergies. Was just amazing to think about it. Everything i rely on for my eyes to see. I cant fathom not having them. My brothers ex girlfriends brother has double prosthetic eyes so i have seen him excell as well but never with tools that can cut and chop body parts off. One huge thing is i have 2 women in the house and they shed hair like 100 siberian huskies i swear to god, so im constantly in paranoia and looking at every piece of equipment, surfaces and totes for hair so it doesnt end up in the product. I give huge respect for Gery

twilliams Onions will get you! This didnt do that to me as I was just too excited to have him on, he was the first thing that happened on Meatgistics that I felt I was really helping people and I will always drop what I am doing to try to help him out because what he is doing is so cool! Yeah, women hair and meat processing don’t go together, my wife is a shedder too (I’m not quite brave enough to compare her to a dog in case she reads this!) and I always find her hair in odd places!
