    Grilled chicken on the Traeger and homemade mac and cheese. I marinated the chicken in the Marinade Express Pro using Cyclops Greek Marinade

    Tex_77 Outstanding. Both look great, but that Mac&cheese looks like it could sustain you for a week on a single serving.

      processhead it’s not as rich as it appears, but its good. I used the recipe out of the Duck Commander cookbook.

        processhead Tex_77 Just brought a tear to the eye on the mac-n-cheese sustainable portion. I’m with him. But, all that food just looks outstanding. Ah, you guys are good for the soul.

          Smoked a brisket on my Treager, i rubbed it with Butcher BBQ Premium, Butcher BBQ Grilling Addiction, and Butcher BBQ Steak and Brisket Rub. I rubbed the pork shoulder with Elk Creek’s Hog Knuckle Rub. I also made two kinds of coleslaw to go with it.

              I had the hankering to do something meat related but I didn’t feel like hauling out all the equipment. So I thawed out 1 lb of (straight) venison and made up some restructured jerky with a jerky gun. I haven’t made that in many years, and certainly not since learning about protein extraction. Smoked it up on the Pit Boss. It came out pretty darned good. I’ve never had restructured jerky like this.

                That’s quite the spread Tex_77!

                Used Pa’s Black Bull (soluble) for the first time today. Injected a deer loin and roasted it. Also did a butcher tie on the roast, I’d never done that before. It was a lot easier than I figured it would be. My 10yo actually cooked it (and some sides). Trying to get her practiced up in the kitchen.

                      gChart Start them early and then, you can get involved when necessary in the future. It’s a process. You and her will both benefit from the experience. Yay for you in “allowing” her to take over some part of the process.

                                Tonight was the blue ribbon bratwurst. With some of my smoked Colby Jack, home made habanero dill pickles. Fresh tomato and a pepper. Really quite delicious.

                                      Joe Hell Just don’t try raising them! I have a friend that does and they are some mean nasty animals. The only thing predictable about them is they’ll take you out if you’re not on your toes. He gets a different beater truck to go out a feed with almost every year. He’s had fenders ripped off and holes gored through the doors, just for fun I guess.

                                      It’s all about the duck fat.
