    Tex_77 This was my first time making it. We had a large amount of andouille requests in the last week so I thought I’d give it a shot. The sausage turned out better than any store bought andouille that I’ve tried. I have a feeling this will be a shop staple! Due to watching my carb intake I only had a small amount…damn diet.

    Joe Hell I’m making Jambalaya tomorrow… have not tried making andouille yet, so like Tex_77 Im using Zatarains… but I’ll be doing chicken and shrimp in it as well…

    Just curious, has anyone tried smoking rice?

        Just put andouille seasoning in wish list, been awhile. Smoked rice? An old friend told me once that rice is just filler… Hmm, I like it.

          PapaSop I agree with your friend, much like the beans Jonathon uses in his chili it is just filler… I’m just thinking if I’'m going to use filler, why not give it some attitude…

            Did a fillet for the dearest and I did a ribeye cap. With some zucchini. Marinated steaks and did a garlic butter. Not bad for a really cold Monday 9C1D797E-DA4C-4871-AE8B-6A4C5C9230F5.jpeg

              Tex_77 Choice, IBP. All their meat is choice, they cater to restaurants and alike mainly. The Top Round was $2.42 lb and the eye of the round was $2.88. They also had pork bellies for $1.99 lb. Had to many in the freezer to buy any more.

                raider2119 Should not be to hard. I smoke barley for beer. You just rinse it with water and remove the dust, put it on a screen and cold smoke it at a low temp.

                    raider2119 the rice will absorb the smoke, just don’t over rinse (wet) the rice. You won’t need to rinse it before you cook it once it is smoked.

                          Tex_77 Toasting it makes it taste more like popcorn, you have to add oil or fat to toast it and as Joe Hell says it adds a lot of nutty character

                            Since I can’t stop thinking about that Jambalaya, anyone care to give up your recipe? Making my own andouille is a ways off so will have to buy that.

                                      Yeah, I know. Another steak pic. Stove took a crap last weekend. Hopefully new one tomorrow. Cold snowy day but the old Weber never fails. Ribeye and a bit of Bulleit will ease the pain. Good background reading too.

                                          johnsbrewhouse Uncle Ben’s used to make a rice (back in the late '70s) that I absolutly loved that had a “popcorn” taste… I will have to try it this week and see if it recreates what they used to sell…
