PapaSop thx! Yeah, it is an old Bosch slicer from 15 years ago. Some plastic is breaking and the thickness guide can vary if you don’t press evenly. I’m looking to buy a good one. Was gonna get the Walton’s 12in for Father’s day, but I don’t want to fold bacon, and want to be able to get a full width brisket/pastrami/corned beef/bacon slice. So I’m still considering…
First belly I made I sliced full width on my 8 1/2 in slicer. Had to be careful though. Second one I did and tried using two hands. Bad idea. Two hands and bourbon don’t mix well.

Never seen that type of slicer before. Bacon looks great. -

PapaSop unfortunately, some call it particular, some call it attention to detail, I call it a n a l and a perfectionist. Some times a good trait sometimes very bad….lol
Nothing wrong with any of those descriptions. Do your thing! Awesome!

Doesn’t matter… Jonathon dislikes both.

Any quick responses?kyle processhead
Funny you guys say that. Was just thinking, if this grinder does everything you say, do I really need the #22.
A small batch for me is 15-25lbs. I’ve been doing more of these lately than larger batches.I’ll obviously still have the 22 around. That said, I may sell the Weston Butcher Series and get the Walton’s one. This is with the intent of getting the 50# mixer at some point. Besides, a little birdie told me the Walton’s #22 may be on sale soon.

Any quick responses? The #12 arrived today. This should work well for doing smaller batches. A little more manageable than the beast. And the preamble shirt.
