Merry Christmas!!!!!I realize that I’m a bit late for a Happy Hanukkah and maybe for whatever version of what I call Christmas you may observe. But I want to wish all of you the Merriest of Christmas seasons and Happiest of New Years! I’m hoping that the New year brings each of you everything you need and then a little more! Cheers to our community and to Austin, Jonathon and the whole crew at @Walton-s and Meatgistics for all they do to bring us together. May all your Christmases be Orange!

New Mixerkyle I know. I’ve missed everyone. Like many, life’s been very hectic. Between working as much as I can to build up my pension and the kids, I sometimes forget which way is up. Hopefully things settle down for a while after the first of the year and I can get back to processing meat and catching up with all of you.

New MixerGrimpuppy I’m at work (I don’t know whether to say again or still) so I can’t measure it but I’m going to say 14-17 inches for the tub itself. You can remove that part for cleaning. I haven’t had any issues cleaning it, although using my slop sink in the basement has made it easier. I’ll measure it when I get home, as long as my “honey do” list isn’t too emergent. I’ll just say that even if it’s not perfectly easy to clean, the ease of mixing and the protein extraction makes it worth it.

QUESTION: How do you handle the leftover mince in the stuffer???I gotta jump on the Patty bandwagon. Not as a test so much as a snack. After spinning the stuffer, I wanna eat! I usually do a test right after I mix to adjust seasoning. I haven’t progressed to fermentation yet (other than wine) so it hasn’t affected me that way.

Hardest part of having a pet. I won’t even start talking about my cat Baylee. Except to say that she got me through working at the World Trade Center and the death of my former partner from when I was a cop who was also my closest friend. She was there though every down time in that part of my life. At the end of hers, which was sudden and natural, I was stuck across the City in a class for work. She was there for me and I let her down. Ok. I’m done now. I can’t.

Drink of Choicezbigjeff I completely agree. In fact, I was emailing with Jon about something else and we talked about it. I needed that so much. I was so busy being strong for the wife and kids that I wasn’t able to even talk about it for myself.
That said 13 years ago we were at a bowling fundraiser for Animal Friends when they brought this girl around for everyone to see. My first words were where do I sign. My second were when can I pick her up. I think it’s pretty obvious from my expression that it was love at first sight…

Drink of ChoiceThis week has sucked. We had to say goodbye to our dog on Tuesday. Second one in 3 years. I’ve been wanting to drink since Monday but I needed to be “there” for the family. Tomorrow I start back on the all work all the time thing so tonight is my chance. I found a use for an old beaker (don’t ask) and some oak kindling… of course it rained all day yesterday so I couldn’t get as much smoke as I wanted. Maybe the second or fourth glass…

My Meatgistics ApronDr_Pain I just got it yesterday and haven’t had the opportunity to get it dirty yet. My thought is to use mild cleaner on it and maybe a leather balm. I’m going to guess that there is a thread on here about that or will be soon.

My Meatgistics ApronJonathon It’s a huge part of the reason I made the decision to buy my stuff from Walton’s from now on. I don’t buy a lot because I had a lot of the equipment that I use before I found Walton’s and work keeps me from doing the amount of processing I want to do. But eventually I’ll need to replace things and “need” to upgrade things too and I’ll be getting them from Walton’s. The customer service is so key. Intentional or not, Meatgistics is a part of the customer service experience. That’s what got me to make my first purchase. Then I saw the same day shipping and the rest of the customer service experience and I became a loyal customer because I feel that Walton’s is loyal to their customers. But you gotta admit that Orange Meatgistics looks awesome on the leather apron…
