    Makes great breakfast sausage. half antelope half pork but plus a little extra fat and some Walton’s breakfast sausage mix. Great in bulk or links.

              That is a nice speed goat! As long as you got it cooled down quickly the backstraps will be good cooked as steaks. The rest I would grind and make sausage with.

                    rticeiii I harvested many “goats “ in Eastern Colorado. I mostly made jerky, roasts, and stew meat. It really made a good Green Chile.

                    Bob Stehlik What units did/do you hunt in CO? I’ve been putting in for the draw for the last few years and have been focusing around Alamosa. I believe units 81, 83 but I’ve been researching some other units on the eastern slope.

                      I burgered most of mine, make steaks from the back straps, cooked the tenders whole.

                        and Congrats on your goat! It is my favorite game meat that I’ve tried so far. I would take a goat steak over an elk steak, personally. Probably going to be in the minority on that one!

                          @rticeii That’s where I used to hunt. South of Flagler on the Bledsoe Ranch. Haven’t been down there since the mid 90’s. As for the Chile Verde, I use Hatch and/or Pueblo and just dice the meat. I like it with larger pieces so I did a bigger dice. Goat also makes great breakfast sausage. We used to grind it with a German sausage seasoning a friends Grand Father used to mix up.

                            RafterW We didn’t have to draw for Antelope. We hunted on private property. We did have to have tags but we had a relationship with a rancher in the area, south of Flagler in Hugo and he’d let 3-4 hunters on a section. We scored every year, however I haven’t been down there since the mid to late 90’s.

                                  Thanks for all the replies! I hunt in unit 112 and 113. I’m blessed to know a rancher that lets me hunt his land. Antelope is a great tasting meat! I love the backstrap! I like to cook it up on the grill medium rare, slice it really thin and let all my family and friends try it. So many of them are intimidated to try it, but once the do they can’t get enough.
                                  My buddy and I grind the rest up and make pepperoni sticks, cheddar jalapeño brats, breakfast sausage using waltons seasoning for everything. SO GOOD!

                                    RafterW I am in complete agreement on the antelope being better than elk, as long as it was skinned and cooled in a timely fashion.
