I just harvested a goat today! Anyone have delicious recipes they would like to share?

A few year back I had to process one harvested in 90° temps. Fastest processing I have ever done. Field conditions, got it on ice in little over an hour, spent the next hour pulling thorns and sand burrs from my hide. Nothing easier than pulling off a fresh hide.

I spend a lot of time talking about ethics and stressing that hunting is much more than harvesting an animal. Anyone can harvest an animal. The way you go about it and treat that animal is what makes you a hunter and not just someone who kills things.

We do the same. I feel awful about something my brother and I did when we were young hunters. It was the first time hunting without Dad. I was 17 and my brother was 15. He shot a huge doe after school one day. We were hunting in a 1981 Plymouth Horizon…hahahaha! We slung the deer over the hood and he held two legs and I held the other two legs. We went into town to brag to Dad that we could get it done without him. I will never forget the look of pure disdain and disgust that a group of elderly women gave us. I have never done anything like that since! I tell this story to the kids I teach in Hunter’s Education as what NOT to do!!!

Both to protect the prized meat and to respect other peoples views.

I’ve seen people drive around with a field dressed deer or two on a cargo hitch carrier for a whole weekend. Driving down gravel roads and prairie trails. I can’t imagine the amount of dirt and dust that gets into the body cavity!

I think more people would enjoy eating wild game if they followed best practices for field dressing and carcass care like you doing.

I cut one of the roasts into nice steaks and cooked them on the grill just to try it. I thought it was great and called him and told him don’t give any more away, I would take the rest of it. He asked me what I did and I told him season lightly and don’t over cook. I should have never told him as I never saw another piece of caribou.

Icing down the carcass is a good practice during a warm season hunt.
Skin and hair hold the body heat in, so getting the animal skinned should be a part of field dressing in warm weather. After the skin is off, its possible to lower the meat temperature much faster, whether it be with ice or just cool air while hanging.

That seemed to make the meat better, we thought. The temps had to stay down in the 30s though. If it had gone above 40 I would have finished them out.
