    calldoctoday I believe you would really enjoy it, I certainly did, even went back for a late snack on one in the fridge cold.

      Sorry no pictures, but fired up the Traeger and 3-2-1 smoked 4 racks of ribs. I’m not a techno guy, but hooked the Traeger into the house wifi it pulled down the cooking schedule. Several hours later, my phone alarm goes off for me to rate how the ribs came out. Nice to not have to look when it was in the mid 20s outside.

        Jamieson22 I enjoy tater tot casserole from time to time, but of course you can make it 100 different ways from Sunday!

        HerbcoFood That is true, like any casserole, but since moving to NM we like to add some chopped up green chile in it. Seems like we like it in just about everything.

          ND Mike If you do, get one Owens BBQ includes a really good wing seasoning and their Tatonka Dust is one of my steak favs.

                  HerbcoFood I think that is how most casseroles and hot dishes got started, see what is on hand and throw it together and see how it comes out.

                    ND Mike Mike, you will really enjoy it, use the high temp mozzarella cheese too. I didn’t know how the bacon would do, but I put a whole pound of maple bacon I made a couple of months ago that was a tad salty for eating and good for cooking. It came out great and the wife said she liked them. I sous vide them to 140 degrees, then finished them on the grill, make sure you prick the casings so they don’t tear once they hit the grill.

                      ND Mike We have as alot of carry ins (pot lucks) around here. Tater tot casserole is a popular dish. So many varieties. Never had a bad one!

                        ND Mike I hadn’t had it in quite a few years, but now that I do most of the shopping, I saw the tater tots and that is what got me going on the hot dish again.

                          wdaly Actually fried them. Haven’t done that for a long time. Next time, I will bake and compare the outcome.

                            zbigjeff I coat them and pan fry them in oil. Usually I pre cook the taters in the microwave so they dont take so long to fry. I take them out of the microwave, let them cool, then slice them. I do this all the time now with shore lunch breading and they turn out great

                                      HerbcoFood Do you put a splash of good apple cider or malt vinegar in with your cabbage and leeks to perk things up? I usually drop a single dried chipotle pepper to give it some kick and a little smoky flavor.

                                          Well, we’ll see how hatch chili citrus dry marinade works on lamb chops. Vacuum marinating until they go into the sous vide bath later on tonight.
