      Joe Hell Here is some research information I found on dry aging using bags. Sounds like you can get just as good of results using the bags, versus using a tradional method and have less waste. Here is the link to the research from K-State link text

          Haven’t had a N.Y. Strip I’ve liked, until tonight.

          Set Rec Tec 680 to 225 & let “Sammy the red rocker” do his magic & take the steaks to 125 internal temp.

          Rest the steaks while shrooms & garlic get tasty.

                          Well here are some filets I did this weekend, sous vide’d, slathered on mayo and more seasoning, then seared on cast iron.

                                craigrice Only pheasant hunting but I’m hoping to come home with a stocked cooler more than anything else. I want to play around with a few ideas for pheasant snack sticks and I’d rather do it with wild pheasants instead of buying the farm-raised ones!
