    Jonathon The pineapple did help to tenderize your chicken, it is a natural tenderizer with the Bromelain that it contains. Just don’t try using fresh pineapple in sausage, it eats the casings, and turns the meat to mush. I have experienced that a couple of time with my pineapple infused sausage experiments.

    johnsbrewhouse There’s a number of discussions on using pineapple in sausage within Meatgistics. Your warning about “not good” has been noted there. But, people still will try to solve it again and again. Geez!!! Papaya is another one to use as a marinade. One has to watch marinating it too long because it makes the meat very sweet. But, never in a sausage.

          lkrfletcher I am with you, love them, though too many hurt my mouth! zbigjeff Yup, we did a video a few years ago where we let a steak sit in pineapple overnight and it was basically falling apart when we put it on the grill, I think we could see through it. johnsbrewhouse Yup, I always try to tell people to use dehydrated pineapples but I think someone pointed out they can be blanched as well to help prevent it from eating your casing/breaking down your protein.

          Tex_77 This might be the 2nd food thing we disagree on, normally we are pretty inline, the other I am thinking of is Mashed Potatoes, which are the devil! If you too have come to realize how bad mashed Potatos are then I apologize for besmirching your good name in saying you like them, because again, they are the devil!

                Jonathon The pineapple has to reach 160 degrees in order to deactivate the Bromelain enzyme. Freeze dried is just like fresh as well as dehydrated, it still contains the enzyme.

                        Tex_77 Cheap vodka is made from potatoes sometimes so it makes sense. Even as a kid I knew what cheap vodka smelled like somehow? I must have made that connection in high school at some point!

                          I think there is a broad range of mashed potatoes. Some are better than others maybe you haven’t had any of the better ones.

                          If the women don’t find you handsome they should at least find you handy.

                            sjhuntingfool people often say that but family and friends all agree my mom made awesome mashed potatoes. I just hate the smell of them and the texture. Is baby food!

                                    Here is a link to the video Jonathon was talking about. I’m not a huge pineapple fan either, like pineapple on pizza is no good. However, mixing it with the chicken was outstanding. You honestly don’t taste the pineapple much it just makes the chicken fall off the bone.

                                      Why didn’t you use the chamber vac? Seems it would have been a better choice with the wet marinade.
