GWG8541 & beyond those years. Skirt steak was just about give away, no one wanted it hardly. Really the same could be said for Beef Brisket back in the late 70s & early 80’s. There are a whole lot of other cuts I can think of, some even more recent until folks caught sight of the popularity wagon & realized what you could do with some of these things. I even remember my version of Blackened Redfish back in the mid 70’s before it was a sensation & not that many people were interested in Redfish (Red Bass, Red Drum, whichever the name). “Just a big breath of not sure what you want to call it.”

Well, rare post for me here. For some reason it just worked. Anyways. Had a ribeye and not much else.

A couple of baby reds, some onion and seasoning. Sliced and simmered with some olive oil, margarine, brown sugar and spices. Not sure how the brown sugar came into play but it worked. Perhaps Mr. Evan’s had something to do with it.

Added some pickled beets from my Aunt. These are like candy.

bocephus Pickled beets are great. Sometimes I put a few with my pickled eggs or okra for a tasty little three way treat.

Picked up some chopped beef meat patties in a small meat market on my way home from out west, then stopped at a local farmers co-op to get the vegetables. The brussels are coated in Franks Sweet Chili sauce.
