processhead Looks like it’s time for some BLTs.
One step closer to BLTs …

processhead make sure that you don’t screw yourself when you package it. Don’t want any shrinkflation. Hahahaha!

Bacon is on my to do list. Looks fairly easy.
It really is easy for the most part.
Curing whole cuts of anything gets you away from the grinding, mixing, and stuffing chores.
Time-wise, products like bacon might be more time consuming, but it’s just down time, because you are just waiting for the process to complete.processhead Again, thanks for sharing your journey. It’s been great to follow your progress. Must be pretty darn satisfying to finally reap the rewards of your labors. Good job.

A HUGE THANK YOU TO ALL OF YOU THAT OFFERED ADVICE AND ENCOURAGEMENT THROUGHOUT THE PROJECT!
Sometimes it is hard to keep up the momentum on a bigger project when there are other things I have to or want to do.
With equipment getting more expensive, I maybe someone can apply some of this project/thread for their own smoker build.
Just remember to be safe with any project involving heat/ electricity and the use of power tools.

ND Mike That would be really bad if you shrinkflated your own packages.

Maybe I’ll shrink wrap it? lol

processhead thank you for including us in your project. It was great seeing it come together.
-
Yes this was a fun project from the viewer perspective and super glad we could come along during the process.

processhead Gotcha okay, Have you sussed out why they went out on you?
I will have to do some more testing but I think this A-mazing pellet tray likes to be filled clear to the top with pellets before it is lit.
It seems to stay lit better that way. Could have something to do with a larger smoldering ember area being less likely to go out.
I have the tube. Works better full. No idea why.
I have a theory, but you know what they say about theories. lol
Anyway, when you are relying on smoldering pellets and no open flame, I think it is just more susceptible to going out. So with more pellets smoldering, you are just increasing the odds that the thing will stay hot enough to stay lit.
The other thing you can do with these A-mazing pellet smoker deals is light both ends to generate more smoke (but for half as long.)
processhead I’ve had zero problems after lighting it on one end as long as I let it burn for at least 2 minutes before blowing out. The 2 min rule solved the “going out” issue.

processhead great post. Thank you for the time and effort you put in. Nice looking piece of equipment that I’m sure you’ll put to great use.

processhead - Paul, what type of heating element did you use under your diffuser?

I used this 1500 watt model from Amazon.

The internal thermostat is removed and bypassed since the smoker uses an external temp control.
I also learned there is an over temperature fuse in the base of the unit that will fail when the element is used inside the hotter environment of a smoker. When that happened, I had to remove it. It has worked reliably since then.
I also am experimenting with this 1700 watt dual element one.
https://www.[link removed]/gp/product/B07HJQCSXH/ref=ppx_yo_dt_b_asin_title_o04_s00?ie=UTF8&th=1It also has had the internal thermostats controls removed. It does not have the over temperature fuse like the single burner element did.

These elements work pretty well. I believe The Sausage Maker uses a basic stove top element like this in their consumer grade smokers. At one time TSM sold just the round elements and a base pan for do it yourself builders, I think it is/was only 1000 watts which is a little on the small side for a cabinet the size of the one I am using on this project.
Since all the radiated heat comes from a relatively small surface, I put the diffuser plate over the top of the element to help eliminate a hot spot in the middle of the cabinet.
-
I think it helps. When you load up a smoker with hanging sausage or sticks, the stuff at the bottom and center will get hotter from the direct radiation from the burn. The diffuser kind of spreads it out more evenly.

have you thought about the plastic inside the unit off gassing when exposed to heat or is the temps . being used not enough to be a concern ?

The largest plastic part was the shelf unit on the inside of the door. That was replaced with a metal panel, as were a few trim pieces around the edge of the interior.
