    @dennyo You made my mouth water just thinking it’s about time for some fried yard bird. Haven’t been able to make for almost 3 months. Yep, the mouth is watering.

      A little smoked pulled pork today with the boneless pork butt that I didn’t cube up to grind for sausage. Costco had a pretty good deal on them last week. I cubed up, vacuum packed and froze 10 lbs. for later and to the 5 lb. chunk and made my pulled pork. Had some homemade coleslaw with apples and orange flavor cranberries and green beans.             Jonathon Used the buttery garlic as a pump for elk roasts, tasted Great! Going to try pumping and smoking a turkey with it next.

                  For those of you dieting, close your eyes. I put a smoked and peppered pork tenderloin on the pellet grill. Thats the healthy part, but then fried up okra and egg plant from the garden, and since the fryer was already on, I also made some homemade French fries. Ill walk a little extra tomorrow.

                    GWG8541 That’s a good looking tenderloin. Not a big eggplant or okra fan, but the potatoes I can eat all day. My wife eats the other things, I just cook them.

                      GWG8541 definitely a great looking loin roast. I like okra in all kinds of ways. Eggplant not so much.

                        Okay today we fell off the keto train. I was supposed to make shrimp and grits but my wife decided she wanted to go another direction. So cooked up some pork schnitzel with some lemon wedges and stuffed mushrooms. No pics of the mushrooms but got one of the schnitzel.

                          johnsbrewhouse I get it. I’ve tried Okra and Eggplant other ways, but fried is the only way I can do them. The exception for Okra is in good Gumbo or other Cajun/Creole dish.  The Okra was soaked in Buttermilk, then dipped in a mix of  cornmeal, flour, black pepper, sea salt and smoked paprika. The eggplant was pealed and sliced, soaked in an egg wash with buttermilk and dipped in Panko crumbs mixed with Slap Yo Mama fish fry mix.  I had a wonderful southern Mom from the Great State of Tennessee.  She taught me well.

                                          YooperDog You BAD BOY. Getting off the keto train. Sometimes, you’re mind just needs the break. Yep, the stuffed mushrooms are on my diet for sure. Those things are only in two categories (love and hate). Here’s a lover.
