Stuffer help

I’m looking for a stuffer that would be the best for snack sticks. I will be using a 21mm casing. I understand the need to adjust fat and water to help make the stuffer work. We make about 300 pounds a year in 50 pound batches and about half is sticks. We broke two stuffers this year and had numerous gasket blowouts which drive me up the wall. The hydraulic are pretty much out of my price range, maybe I should say don’t want to spend that kind of money. I thought you guys would be a great resource. Thanks in advance.

@d-walt Look at the 11 lb Waltons stuffer, it is the biggest one I know of that still has the small cylinder which I believe you need for snack sticks. I know you will have to load it more often but I think you will have better luck with one with a smaller cylinder. I have a 5 lb LEM that I don’t have any problems doing snack sticks with, but I am thinking of buying the 11 lber for less refilling.

One was the old antique cast-iron the break was the frame (heck of an explosion). We used that old one for a lot of years. The other was like a kitchener (?spelling) kind of a p.o.s. and it would just keep blowing gaskets. It was about a 20 pounder that worked great for the larger sausage.

Very happy with mine. Large enough to get the job done, small enough to easily clean and store. Works great.

I recently bought the Walton’s 11 lb stuffer for making snack sticks and it works great! I bought it because I previously used my grinder to stuff and when I tried to use high temp cheese, the cheese turned to mush. With this stuffer, the cheese stays intact and the texture of the meat is even better quality. I used the smallest, I think it is 13 mm, stuffer attachment and I could hardly keep up with with the stuffing as my son turned the stuffer. It did not bind at all. I made #25 lbs of snack sticks in about 10 - 15 minutes. I wish I would have bought the stuffer a long time ago.

Haven’t heard of any bad reviews on them especially with people making snack sticks. May give my 5 lb LEM to my brother and purchase one, I have been making more 10 lb batches of snack sticks.

I assume one full cylinder will fill one entire stick of 21 mm collagen casings? Hate to assume things…
@d-walt I measured a full casing, stuffed 3# of sticks and measured what was left of the casing. That told me how much casing I used. Divided by three and found inches of casing to a pound of meat. Cuts down on waste because you just cut off how much casing you need for size of the load.

wdaly good idea. Plus I like to rub it in for my kids whenever algebra comes in handy in real life. I was also the kid who complained in math class wondering when we would ever use these skills in real life…and go figure now I am in the field of Metrology Engineer (measurement not weather)

Purchased the 11 pounder last week and we are ready for deer season. Thanks for all the information. Probably won’t use it until after the first of the year but will post when we do and let you know how it works. Thanks

@d-walt This is on my wish list, I have a 5 lber that works good but want an 11 lber so I don’t have to refill, I like doing 10 lbs of sticks so I think an 11 is the way to go.
