I will be using a 21mm casing.  I understand the need to adjust fat and water to help make the stuffer work.  We make about 300 pounds a year in 50 pound batches and about half is sticks.  We broke two stuffers this year and had numerous gasket blowouts which drive me up the wall.  The hydraulic are pretty much out of my price range, maybe I should say don’t want to spend that kind of money.  I thought you guys would be a great resource.   Thanks in advance.</p>

That told me how much casing I used. Divided by three and found inches of casing to a pound of meat. Cuts down on waste because you just cut off how much casing you need for size of the load.</p>

I bought it because I previously used my grinder to stuff and when I tried to use high temp cheese, the cheese turned to mush.  With this stuffer, the cheese stays intact and the texture of the meat is even better quality.  I used the smallest, I think it is 13 mm, stuffer attachment and I could hardly keep up with with the stuffing as my son turned the stuffer.  It did not bind at all.  I  made #25 lbs of snack sticks in about 10 - 15 minutes.  I wish I would have bought the stuffer a long time ago.</p>

We used that old one for a lot of years. The other was like a kitchener (?spelling) kind of a p.o.s. and it would just keep blowing gaskets.  It was about a 20 pounder that worked great for the larger sausage.</p>

I know you will have to load it more often but I think you will have better luck with one with a smaller cylinder.  I have a 5 lb LEM that I don’t have any problems doing snack sticks with, but I am thinking of buying the 11 lber for less refilling.</p>
