    @NDMike and zbigjeff Thanks, I’ll have to try both of those. I really don’t drink very often but I do enjoy a few drinks now and again. glen huh, that is a pretty decent-sized swing, guess every batch really is different. Crazy that yeast and sugar make so many different types of alcohol! Also, crazy that we are can use the waste of yeast to sanitize things.

    Jonathon One of the hallmarks of Elijah Craig barrel proof is the proof swings 136.8 is not the highest in the series but is very close. The latest batch, B521 is 118.2 which is fairly low for the series

      The alcohol content is dependent on the distillation process and the evaporation rate in the cask during aging (angel share), in these batches.

        The master distiller decides what alcohol percentage to barrel the juice based on their impression of the distilled white wiskey and desired final results.
        After various aging times most of the results after will be mixed for their standard brand labels which tastes the same every time
        One of the decisions is to barrel high and dilute after barreling or to dilute before before barreling and less after.

          alanburkholder I’ve heard of angels share being the evaporate but apparently there is also some small % that gets absorbed into the wood? I saw a commercial once with …whats her name, the girl from that 70s show where they talked about the devils share being what is absorbed into the wood…what’s that girls name? If Patrick was in the room he would know…Mila Cunos? However you spell that.

                                  PapaSop - I love a good Bloody Mary. I usually skewer Habanero dill pickle, a cube of smoked cheese celery and a stick of bacon. But as you know, there are a ton of possibilities.

                                      I think it used to be called Budvar, the original Budweiser.

                                          According to a little quick research, it is still marketed as Budvar in most of the world.
                                          It is marketed as Czechvar here in the US and in 6 other countries after some long standing legal squabbles with Anheuser Busch.
