Cajun Style Fried Chicken

We almost never fry chicken at home, but really enjoy fried chicken and Popeyes fried chicken, particularly dark meat, thighs, legs, and wings.
Anyone tried to replicate this style of fried chicken?
processhead i had Popeyes a few weeks back for the first time in Champagne Illinois. Sad to say i wont go back. Kentucky Fried Chicken all the way. Now that i would like to duplicate

twilliams Popeye’s is probably not for everyone, but while we lived in Louisiana we got addicted to the spicy version. Their mild chicken is ok but doesn’t really do it for me.
The chicken, along with their sides made for a satisfying fast food meal. The red beans and rice and dirty rice are pretty good. They used to have excellent fried onion rings but sadly they are no longer on the menu. On the plus side, they have added a spicy chicken sandwich that to me is top-shelf.

processhead I’ve only had Popeyes spicy chicken sandwich and it was pretty good. My wife got the plain sandwich and we each took a bite of the others sandwich. We both agreed the spicy was much better. Not sure why there is such a difference, but there is. twilliams I do still like a good KFC dinner now and then.

processhead I would use the marinade that we sell for chicken on the run too (https://www.waltonsinc.com/chicken-on-the-run-marinade) it is almost ridiculously reasonably priced at less than 2 dollars for enough to marinate an insane amount of chicken. That has a nice saltiness to it that is going to come closer to a KFC or Popeyes chicken.
On a somewhat related note, has anyone had a chance to try the Taco Bell chicken sandwich? I might break my no fast food rule if it ever comes here and grab a chic-filet, a BK, a Popeyes and one of those and do a podcast on it with @The-Fridge-Raider who is the most amusing person I have ever listened to when reviewing food.

processhead interesting fact Popeyes and churches chicken are owned and operated by the same CEO. They use the same recipes for chicken. Churches is just a low budget operation and the chicken is much less expensive but no red beans and rice

At one time, Popeyes was the only chicken franchise (that I am aware of) that offered fried chicken livers, which I also really crave once in a while. They quit offering those too, and moved towards more seafood offerings on the menu. Popeyes biscuits are pretty good too.
JoeB at one time Al Copeland was the owner and CEO of Churches and Popeyes’s . Back in the day, he would decorate the outside of his house for the holidays and it became kind of a destination place for people to drive to in New Orleans.Paul

JoeB I remember going to see his Christmas displays. It was extrodonary. They got bigger each year until the neighbors won a lawsuit and Copeland moved his display I believe to City Park.

Chef you see I read his biography but you guys walked the walk. I do remember that churches was developed to comp for losses

Their chicken is pretty good, but they cook their chicken livers and gizzards to order. Always hot and tasty.
If you ask my wife her new go to place is Buc-cees, she is impressed withe the size of place and number of pumps. And she can always find something that she needs to buy, and their bbq isn’t to bad.

craigrice Sounds like you live in a similar environment that I do. We have a few fast food franchises in the cities.

Marinade with this:
Waltons Buffalo Wing MarinadeThen use the a double dip of Chicken on the Run breading and fry. It will get you pretty close. The Buffalo Marinade gives it a spicy kick without the buffalo sauce taste like Franks.
