PapaSop Imagine just how fine that would look in blue.

Did want to ask you, on the chat how do you do an @ name I can’t seem to get that to work. Thanks

Not sure. What I found out. If they have commented and you you do the @ symbol they will show up. Or if you do the @ and start putting the first two letters of the name it will usually show up or give you a lot of names to scroll through. But not always. Weird.

@ndmike i would use combination of beef and pork. If it was gonna be for myself i would go ground round and pork. 7.5lbs ground round 2.5 lbs pork trim 80/20 and 2.5 lbs pork fat. If i was selling then i would just use combination of regular beef trim and pork trim

Besides Willies, which I really like, what are some of your favorite snack stick flavors that Waltons stocks?

@NDMike This is a hard one for me but here are mine, though they change:

            1. Willies, best seller for a reason
            2. Habanero BBQ, nice mix of sweet and heat
            3. Gigawatt nice and hot, especially with ghost pepper
            4. Taco Flavored new but I really like it. I am sure I am missing something here…

Oh, I made sticks from Supreme Pizza and they were really good but that is not a snack stick seasoning. I think I used 18 lb of meat to a full bag of seasoning to make up for the lack of salt content.

Jonathon i remember you talking about the Supreme pizza ones. That sounds good…especially if you added mozzarella cheese.

Jonathon Wasn’t there a Pizza flavored snack stick available not too long ago? I do not see it on the website now, but I know I did a batch of pizza snack sticks maybe about a year ago and I am sure I did not just modify the brat seasoning.
Now that I think of it, I think this was the seasoning that twilliams had some problems with.

twilliams curious on Bourbon Peppercorn…regarding heat level, I’ve just made a batch of willies and my wife says they’re to spicy for her. Looking for something we can both enjoy, hows the heat compared to willies?

Snacks I you are looking for a mild one, I made a batch of the Bloody Mary and they were mild but had a good flavor. I did use ECA in the batch I made, which may have added to the taste.

Snacks if you haven’t told her the flavor name yet just tell her it’s peppercorn. Some folks really get thrown off by the word “bourbon” if they don’t like whiskey and automatically get it in their brain that they don’t like it. I can’t taste no whiskey in it what so ever.

cdub2007 Yes, there was. Apparently, they were/are having trouble with the formulation, I have heard it was an ingredient that was hard to find but from twilliams
information, I think it might be a reformulation. Personally, I don’t love the pizza flavored snack stick that much, tasted like tomato powder to me. I have had a few people here tell me I am crazy though and they like it. One of the big things with that seasoning is that it does develop over the course of a few days. If/when it comes back out we will let everyone know.

Sticks are done. Taco, Bourbon Peppercorn and Maple Bacon. Started pulling from the smoker at 132 and into the Sous Vide. All three batches took less than 20 minutes combined time to hit 160.

                                        PXL_20210511_160827813.jpg PXL_20210511_161918920.jpg PXL_20210511_164200970.jpg

Oh yeah, had to sample each one. All three are very good. The kids and grandkids are going to love these.

PapaSop Can you give a review of the bourbon peppercorn flavor? You and twilliams both seem to like it and it has me thinking maybe I need to try it again?
