    Tex_77 It’s basically the same muscle that you would find on a cow. I’ll have our meat ninja dissect one today and I’ll post pics! We were running low on stuff for me to grind for sausage the other day and they offered that up. I refused and cooked it instead! (They were all glad that I did!)

      skibumben nice, my sour dough starter is ready so I will be making some today while I have Axis deer with wagyu trim sticks going in the smoker. I hope my bread turns out as nice as yours

        Made two loaves of sourdough today, too. Don’t know how to post the pics, but they are beautiful !!! Can’t find yeast around here, but as long as I don’t kill my starter I’m OK. (South east MI)

          Still sideways, but bottled the grape juice and smoked some sticks today.

            Cooking Sap. I have pork bellies and a green ham biding their time curing before they go in the smoker.

                    Joe Hell I need to try that. Problem is & cannot even seem to get pork bellies & getting that brisket will be more of a challenge. It looks good though!

                            Joe Hell Apparently there is a different name for a pork brisket… This is pig production country, but I’ve never heard of it nor as the farmer that I’ve been buying pigs from…

                                        I did a loaf of hawaiian bread last night… we sliced it up and ate half the loaf while it was still warm, finished it off for breakfast as french toast…
